Topside is best suited to roasting, with care taken not to overcook it as it is naturally lean.

It works particularly well:

• As a traditional Sunday roast
• Served pink to medium
• With roast potatoes, vegetables and gravy
• Sliced thinly for sandwiches
• Used cold in salads or platters
• Added to leftover roast beef dishes

For best results, allow the joint to come towards room temperature before cooking, season well, roast to your preferred level of doneness and rest thoroughly before carving.

Your order may arrive chilled or frozen, depending on availability. If chilled, please keep refrigerated and enjoy by the use-by date shown on the label.

If frozen, transfer to the freezer or allow to defrost slowly in the fridge. If your beef arrives partially defrosted, keep refrigerated and enjoy within 24 hours.
