Welcome to The Evercrest Edit - a monthly look at a different cut of beef, how we like to use it, and why it earns its place in the kitchen.

This Month's Edit

Cut: Beef Mince

Best for: Quick dinners, batch cooking, tacos, koftas, cottage pie

Offer: Free 0.5kg mince on orders over £20

We’re starting with one of the most useful cuts of all: beef mince.

It’s not a complicated cut, and that’s part of its appeal. Mince is practical, familiar, and easy to cook with - the sort of thing most of us reach for without thinking. But when it’s made with good beef, you can tell.

01 / The Cut

Useful, familiar, and easy to cook with.

It’s useful for quick midweek meals, family favourites, batch cooking, and filling the freezer with something reliable. It cooks quickly, takes on flavour well, and can be used in all sorts of ways depending on the season, the weather, or what you already have in the cupboard.

That’s why we wanted to begin with it. Not because it’s the most showy cut, but because it’s one people genuinely use.

“Very pleased with the quality and flavour.”

02 / The Difference

Great mince starts with great beef.

The quality of the mince affects the flavour, the texture, and the way it cooks. It should brown nicely in the pan, have a proper beef flavour, and give a good base to whatever you’re making — whether that’s a quick taco filling or a slow-cooked sauce.

Mince is also one of the cuts that gives you a real sense of the beef itself. Because it’s made from a range of cuts, the flavour comes through clearly, which is why the quality of the beef matters.

“Best mince I’ve ever had.”

03 / The Cooking

One of the best things about mince is how adaptable it is.

Most people immediately think of chilli, cottage pie, or burgers — and for good reason. But mince can also be one of the most creative cuts in the kitchen.

Smash Tacos

Press a thin layer of seasoned mince directly onto a tortilla, then cook beef-side down in a hot pan until crisp and caramelised.

Flip, add cheese, and finish with lettuce, pickles, and burger sauce. Somewhere between a taco and a cheeseburger, and surprisingly addictive.

Koftas

Koftas are a great reminder that mince doesn't have to mean comfort food.

Mix with garlic, herbs, cumin, and coriander, shape onto skewers, then cook on the barbecue or under a hot grill. Serve with flatbreads, yoghurt, salad, and plenty of lemon.

Beef Flatbreads

Spread seasoned mince thinly over a flatbread before baking or grilling.

Inspired by Middle Eastern lahmacun, they're brilliant topped with herbs, yoghurt, pickled onions, and a squeeze of lemon.

Loaded Jacket Potatoes

One of the easiest meals to overlook.

Top baked potatoes with chilli beef, taco-style mince, or even cheeseburger mince with pickles and grated cheese. Simple, filling, and far more versatile than people often remember.

Beef & Kimchi Rice Bowls

For something a little different, serve crispy fried mince over rice with kimchi, cucumber, spring onions, and a fried egg.

The richness of the beef works brilliantly with sharp, fermented flavours.

Cottage Pie

And sometimes, the classics are classics for a reason.

Cook mince gently with onion, carrot, stock, and a little Worcestershire sauce, then top with mashed potato and bake until golden. Simple, familiar, and very hard to beat.

“The fat content of the mince is perfect.”

04 / The Keeping

Beef mince is one of those things that makes life easier.

Having a pack or two in the freezer means you’ve always got the start of a meal ready to go. It defrosts fairly quickly, works with lots of different ingredients, and can be stretched into bigger meals when needed.

05 / The Evercrest Edit Offer

Each month, The Evercrest Edit will come with a featured offer linked to the cut we're talking about.

For this month's Edit, we're offering free 0.5KG Evercrest Beef Premium Mince on orders over £20.

It’s a good chance to try one of the most useful cuts we produce, and a small thank you for supporting Evercrest.

06 / The Final Word

Mince might not be the cut people get most excited about, but it’s one of those reliable staples that you'll reach for time and time again.
